The New York Times and a sourdough version from Sourdo.

Haha, you are lazy, huh!? Well, I had in fact also stumbled on this technique, and was gonna make a no+knead bread too.
You know, I actually like keading. It is very meditative, one of the pleasures of making bread.
I just made a loaf last night, probably my first in 20 years! Haha. And you’re right kneading is nice!
I just found this article about kneading. This is quite interesting.
Hmmm, I’m not sure what the take home messages are…
It seems that kneading, even if it is nice and meditative, is not anymore a very important step for the preparation of bread, unless you make whole meal bread, where some kneading helps improve the bread. I think that I shall always knead my bread, though.
I had to rush out to my choir yesterday, so I only added short messages without much comment, sorry.
